Lunch Struggles!

Who loves to fix lunch for there kids to take to school? When I say it’s a struggle to prepare lunch for the little guy with all of his allergies, it’s not an exaggeration. There is no easy way out or quick lunches to prepare for him to take to school. Eating lunch that is provided at school in the cafeteria is never an option with all of his food allergies.

Over the past few weeks I noticed that he was not eating what I was sending for lunch and his lunch box or container would still be full when I went to empty it to clean. We talked about it and he said he just didn’t like what I was sending for lunch. I figured out that I better get creative so that he would eat his lunch. I though since the foods he can eat are limited and what he likes to eat is limited then one of the options would be to make his foods look fun, have him choose what he would take for lunch and have him help me prepare.

It gives me the flexibility to have all of his items in one place and he doesn’t have to open up multiple containers and leave them at school. The really cool part of the lunchbox is that it comes with 2 portable containers where you can use for dip, yogurt, applesauce, dressing etc.

I have been testing out different combinations of foods for him to take to lunch. The lunch menu for today included (2) gluten free mini pancakes with syrup in the mini cup, blackberries, blueberries and watermelon. I use the decorative cutters for his fruits and vegetables like apples, carrots, cucumbers and watermelon. He loves to help me cut out the shapes and then eats the little pieces after we cut them out.

Some of the other foods that have been easier to send with him and that does not come back home has been Sushi, steamed broccoli, gluten free homemade french toast, salad, gluten free pasta and dairy free yogurts.
Here are a few pictures of some fun and delicious lunch options we have created so far. Again, the small wins in having this new lunchbox give me major options In selecting fun lunch items for the little guy.
